What is Coconut Sugar?
Coconut sugar is a natural sweetener made from the sap (nectar) of coconut palm blossoms, and not from the coconut fruit itself. The nectar is collected, gently heated, and dried into golden, caramel-like crystals. Unlike refined white sugar, coconut sugar is minimally processed and retains small amounts of minerals like potassium, iron, and zinc, along with naturally occurring inulin (yes, the same gut-friendly fiber found in Jerusalem artichokes!).
Despite the name, coconut sugar doesn’t taste like coconut. Its flavor is more subtle, very similar to brown sugar, which makes it perfect for balancing the earthiness of matcha without overpowering it. And because it's lower on the glycemic index than regular sugar, it provides a slower, more steady energy release (more on that later!).
What does “organic” coconut sugar mean?
It means the coconut sugar we're using is made without synthetic pesticides, fertilizers, or chemical additives. The organic certification ensures the farming and processing follow certified organic standards for clean, natural production.
Why did we include it in our Not Too Sweet Matcha Blend?

Organic Coconut sugar plays a functional role in our matcha. Because matcha doesn’t naturally dissolve in liquid, we use a combination of ingredients to help it blend more easily. The same way we use Organic Jerusalem artichoke inulin in our Classic Blend, we use Organic coconut sugar for our Not Too Sweet blend to support better solubility, helping the powder mix more smoothly into warm water or milk, so you don’t end up with clumps in your drink or have to use any special tools.
A balanced flavor (without being a “dessert drink”)
Coconut sugar offers a naturally balanced, mellow taste that rounds out the blend and balances the slight bitterness of the matcha, without making it taste like a dessert. Unlike other brands using up to 90% refined white sugar in their matcha mixes, we use organic coconut sugar to soften the edges, not to sweeten the whole drink. Think of it as a flavor support player- it brings a touch of sweetness and balance, especially for people who want a smoother, more approachable matcha experience without needing to add anything else.
